Saffron Chicken Soup

Ingredients:

  • 1 lb chicken breast
  • 1 large onion
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1/2 teaspoon saffron threads
  • 4 cups chicken broth
  • 1 cup carrots
  • 1 cup potatoes
  • 1 cup peas
  • Salt and pepper
  • Fresh parsley (for garnish)

Instructions:

  1. Soak the saffron threads in a small amount of hot water.
  2. In a large pot, sauté the onion and garlic until soft.
  3. Add the diced chicken and cook until browned.
  4. Stir in the cumin and saffron infusion.
  5. Add the chicken broth, carrots, and potatoes. Bring to a boil, then simmer for 15 minutes.
  6. Add the peas and cook for an additional 5 minutes.
  7. Season with salt and pepper, and garnish with fresh parsley before serving.
