Saffron Chicken Soup

Ingredients:
- 1 lb chicken breast
- 1 large onion
- 2 cloves garlic
- 1 teaspoon ground cumin
- 1/2 teaspoon saffron threads
- 4 cups chicken broth
- 1 cup carrots
- 1 cup potatoes
- 1 cup peas
- Salt and pepper
- Fresh parsley (for garnish)
Instructions:
- Soak the saffron threads in a small amount of hot water.
- In a large pot, sauté the onion and garlic until soft.
- Add the diced chicken and cook until browned.
- Stir in the cumin and saffron infusion.
- Add the chicken broth, carrots, and potatoes. Bring to a boil, then simmer for 15 minutes.
- Add the peas and cook for an additional 5 minutes.
- Season with salt and pepper, and garnish with fresh parsley before serving.
