Saffron and Lemon Chicken

Ingredients:

  • 4 chicken thighs or breasts
  • 1/4 teaspoon saffron threads
  • Juice and zest of 1 lemon
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Soak the saffron threads in a small amount of warm water.
  2. In a bowl, mix the lemon juice, lemon zest, olive oil, garlic, oregano, and saffron infusion.
  3. Marinate the chicken in the mixture for at least 1 hour.
  4. Preheat the oven to 375°F (190°C).
  5. Place the chicken in a baking dish and bake for 30-35 minutes, or until cooked through and golden brown.
  6. Serve with a side of vegetables or a fresh salad.
