Saffron and Lemon Chicken

Ingredients:
- 4 chicken thighs or breasts
- 1/4 teaspoon saffron threads
- Juice and zest of 1 lemon
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Soak the saffron threads in a small amount of warm water.
- In a bowl, mix the lemon juice, lemon zest, olive oil, garlic, oregano, and saffron infusion.
- Marinate the chicken in the mixture for at least 1 hour.
- Preheat the oven to 375°F (190°C).
- Place the chicken in a baking dish and bake for 30-35 minutes, or until cooked through and golden brown.
- Serve with a side of vegetables or a fresh salad.
